Bischochitos area New Mexico's tradition during Christmas season and are enjoyed all year 'round including weddings, baptisms, special occasions and celebrations, and other holidays. This delightful anise and cinnamon flavored shortbread cookie became New Mexico's official state cookie in 1989.
